How would I get rid of these ugly black backgrounds that show up on my gallery?

I'm sure its just something simple in my theme that I need to edit, but I've tried everything with no luck.

That color is controlled by the tborder class in the style.css of that theme.
If it is not needed you can just remove the class

Open Gallery.template.php
Find All

Replice with nothing or space
