Its for the lite edition it is a good start though for translating the pro edition.

Question though, if I want the gallery to appear entirely in Polish without the option to toggle between languages, can I simply translate the contents of the existing files (replacing English strings with Polish strings) without adding Gallery.polish.php, etc? And would you mind pointing out which files exactly need to be translated. I have to admit that I'm a little lost at the moment

You would probably need to create a Gallery.polish.php file and a modifications.polish.php file and copy the gallery text to those files.

Main one are Gallery.english.php
And Modifications.english.php which added some english gallery text strings
