Hello

I don't want people to be able to pay trough paypal. They should individually exchange bank account informations and adresses. How do I delete the whole PayPal thing?

There is a setting under classifieds configuration
Hide PayPal field on Add/Edit Auction and Listing

What if I don't at all want that buy now button on every list?
I only want people to be able to buy trough PM, mail, comment whatever

If you do not want any pricing at all you can edit the category and check "   No Price/No Bidding" option
