Is there a way to make the gallery icon a thumbnail of the last image uploaded ?

Not at the moment. There is a button when viewing a picture as an admin to set a picture as the category thumbnail.

ok thanks This would be a nice new feature I think. I made a bunch of small 3d text images for the gallery icons so far.
