How would I go about tracking logged in members to see who viewed an item, when they did, and whether or not they ended up purchasing?

Would be hard to do maybe  with google anyatlics in passing the member id or membername to it so you can track on google analytics

Had no idea that could be done with Analytics!

I was thinking of setting up a table in the database to do this.

Which is a better idea?

You can do with tables in the database just would be some work to setup and track the information.

analytics you can pass user id's then setup reports goal in analytics for different pages

But you would need to export the data out and compare it on your end to match the user id's with the member's ids in the smf database.
